menu planning for NYE '08.

i have so much to do and yet have still taken it upon myself to throw a small get together at my place for NYE. sophia has come down with a cold and it's best for her to be able to rest at home and in her crib.

i really want to make my own little gourmet pizzas. i can use pre-made crusts and throw some fresh mozzarella, garlic, pancetta, fresh tomatoes, and arugula on one, and mushrooms, caramelized onions, and gorgonzola cheese on another. target also has these amazing (yes, they're frozen. and easy. shut up.) spicy apricot hor d'oeuvres that are to die for. swear. i can also make mini tortillas espanolas by cooking little individual tortillas in a cupcake pan. maybe i shouldn't over do it and stick to that. but herb marinated goat cheese served inside radicchio leaves would be so tasty, though! oh well, the boys will be grilling on the balcony and i'm sure that someone will bring desert. the 12 grapes at midnight are a given.

must figure this out soon. i will consult with the hubster.

- i didn't have one last year. this year, it will be to drop the lbs.

- not that i recall.

- a honeymoon.

- successfully giving birth to my beautiful daghter and successfully pulling off a wedding for 5k.

- entirely too much clothing.

- vv, for being an awesome husband and father and sophia for being an awesome baby.

- in all honesty, who cares? life goes on.

- happier because i have my daughter, sadder because i am fatter. i will prevail.

- eaten a bit healthier throughout my pregnancy.

- eat crappy food.

- with my husband's family.

- don't have the time nor the energy to hate anyone at the moment. i've written off a few people.

- none. i read school books.

- a wedding, a baby, a spa package.

- a legitimate louis vuitton speedy 35 bag and a tight ass.

- not having to come back to work.

- 2/3 of the year consisted of preggo wear.

- my husband, friends, and family. and the ginormous coffee's and 2 for $2 breakfast from mcdonalds.

- chef colicchio.

-the fact that the old fart chose sara palin as vp.

- my granpa, eternally.

- sophia and a new coworker.

- no matter the ups and downs, be true to yourself and everything else will fall in its place.

xmas '08.

i received 2 sets of 16 of the white, square corelle plates for xmas. (plus some other stuff...)

they are simple, yet elegant and they make food look damn tasty.
aside from that, we received a copious amount of toys for sophia. (i quickly learned that once you have a child, you will pretty much only receive gifts for the wee one.)
in any case, i'm glad that i was able to spend the day with my daughter, husband, and the rest of the family. the plates were just a bonus ;)

now, what the hell is going on for new year's?
i'm thinking about sponsoring a child. i wonder how legit it actually is...

under the weather

so i stayed home from work today since i abruptly came down with some wicked cold. this means i got to watch top chef and the food network for the majority of the day. hallelujah.
i wish i could have mucinex laced ice cream.

i made these awesome brussel sprouts last night. since i'm not supposed to use butter, i cooked them in water. to my surprise, they came out delicious. (i also cooked my chicken breast in water and i'm most probably not going to use oil ever again.)

i started off by cooking turkey bacon on the skillet. once it started browning, i chopped up some garlic and threw it in (i can't give up garlic. i don't care what this diet says). i slowly kept adding little bits of water so that the bacon and garlic wouldn't stick. i added thawed brussel sprouts that were halved and sauteed it all until the brussel sprouts started browning.
done and delicious! the picture i posted on here shows added walnuts and blue cheese, which i'm sure tastes incredible as well.

alas

a gym membership. they measured my bmi, and let's just say that i am definitely unhealthy. my goal is to lose 30 lbs in 12 weeks. here we go.

i really want to make crab cakes. i wonder if i can alter the recipe to fit the diet that i'm currently on?

for those who like crab cakes and are on a slight budget, here's the original recipe that i lovelovelove that uses imitation crab. i swear, it's worth it:

1 pkg. of imitation crab
1 c. panko bread crumbs
2 tsp. mayonnaise
1 tsp. grey pupon
2 eggs
1 onion, sm. (diced)
parsley
pepper to taste

mix all ingredients well. let it sit for 15 minutes in the fridge. form into patties. brown on both sides in a small amount of oil.
i also make a quick dijon vinaigrette to drizzle over the cakes using grey pupon, minced garlic, pepper, parsley and vinegar. voila!

day 1.

today, sophia is 5 months old. i have been blessed with such an amazing baby. let's hope this continues...

i have started my tracy anderson diet today. it doesn't help that i completely forgot to eat breakfast this morning (packing the baby bag and rushing to daycare to get to work on time was priority), but i did get to pack my lunch and a snack for the rest of the day (salad - no dressing, and tilapia - no seasoning). this no seasoning stuff is going to be the hard part.

this trainer is the guru behind the bodies of madonna and gwyneth. the diet and exercise routine promises that you will lose 20 lbs in 6 weeks...which is right around my one year anniversary (one year married, 3 together) with vv. i could care less about eating ham on christmas. i'll have vodka tonics with a side of flavorless chicken breast and brussel sprouts. i'd rather cheat with drinks than food anyhow. as for the exercise routine that goes with the diet, i'm going to go to l.a. fitness today and get a membership. here's a link to their class schedule if anyone is interested:

i'm also down for going to different locations when my schedule permits for whoever wants to pair up. i plan on going to the 7pm - 8pm classes monday through friday, which include spinning, kickbox cardio, step plus abs (i'm still unsure about this one. i may just stick with the tracy anderson post pregnancy workout dvd that i have and do abs with that every morning), hip hop, and yoga. i'm also going to invest into a jumping rope and also run up and down the stairs at my new apartment for the 20 minute ipod cardio sessions that the article talks about.

ps: i got a B on my classes. not too shabby considering i had a newborn and had to teach myself things i could care less about (ie: algebra, microeconomics, etc...)
